SNACK: TORTITAS DE CAMARON
Shrimp cakes con nopales en salsa roja
SALAD: ENSALADA DE TOMATE CON NOPALES Y VERDOLAGAS
Tomato salad with cactus and purslane, herbs, jalapeño vinaigrette
SUPPLEMENTAL COURSE: NARDELLO RELLENOS
Cheese-stuffed, egg battered & fried Jimmy Nardello peppers on a bed of raw tomato salsa, chiles, fresh oregano
MAIN COURSE: PORK RIBS IN CHILE VERDE
Riblets and purslane braised in tomatillo salsa, chicharrones, lardy Mayocoba beans, salsa de molcajete, calabacitas, Xulo flour tortillas
DESSERT: PAVLOVA DE AUXILIO
